Baby girl turned one this past week. We hosted a Unicorn Themed Tea Party to celebrate her first year of life. The menu centered around desserts and appetizers/finger foods. It was honestly adorable! We had multi-color rice krispy treats, cake balls, and chocolate covered pretzels. Pinterest had great ideas for rainbow/unicorn desserts. But it's pretty hard to find actual foods that fit the theme. In addition to cheese and crackers, we borrowed from some tea party go-to foods. We served mini chicken salad sandwiches with home-made chicken salad! DELICIOUS! We had 3 varieties of mini-quiches as well, which are super easy to make! The smash cake was super simple because honestly it doesn't really get eaten anyways. It's just a box mix yellow cake and some purple frosting. For guests, we served rainbow cupcakes (white cake mix + food coloring) and topped with home-made buttercream frosting. Rainbow Cupcakes (not frosted the prettiest - surely not a Pinterest worthy picture) But anyways....the cupcakes were adorable themselves and the second batch frosted nicely--they needed more time and were too moist to frost at this point. -Make cake mix according to directions -Divide batter into 4 bowls evenly -Add a couple drops of desired color per bowl (4 different colors) -Put a spoonful (around a tablespoon, little less) of each color into lined cupcake tin -Repeat process until out of batter -Cook according to package directions.
